Instant Pot Dal Makhani: A Classic Indian Lentil Dish made easy

Ingredients
1 cup black lentils (urad dal)
1/4 cup red kidney beans (rajma)
4 cups water
2 onions, finely chopped
2 cloves of garlic, minced
1 inch ginger, grated
1 cup of tomato puree
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon garam masala
1/2 teaspoon turmeric
1/2 teaspoon red chili powder (adjust to taste)
Salt to taste
2 tablespoons of ghee or oil
1/4 cup of chopped fresh cilantro for garnish
Instructions
Rinse and soak the black lentils and red kidney beans in water for at least 6 hours or overnight.
In the Instant Pot, add the soaked and drained lentils and kidney beans and 4 cups of water.
Close the lid and set the Instant Pot to “manual” mode for 20 minutes at high pressure.
Once the cooking time is up, allow the pressure to release naturally for 10 minutes before using the quick release to release any remaining pressure.
Set the Instant Pot to sauté mode, and add ghee or oil. Once hot, add chopped onions and sauté until softened and lightly browned.
Add the minced garlic and grated ginger and sauté for another minute.
Stir in the cumin powder, coriander powder, garam masala, turmeric, and red chili powder and cook for another minute.
Add the tomato puree and salt and stir. Cook for another 2–3 minutes.
Add the cooked lentils and kidney beans to the pot and stir. Add 1 cup of water if the dal is too thick.
Close the lid and set the Instant Pot to “manual” mode for 5 minutes at high pressure.
Once the cooking time is up, allow the pressure to release naturally for 5 minutes before using the quick release to release any remaining pressure.
Open the lid and stir in the cilantro.
Serve the dal makhani over rice or with naan bread and enjoy!
You can adjust the thickness of the dal to your preference by adding more or less water. You can also add some cream or yogurt at the end of the cooking process to make it more creamy.
